The Ultimate Mushroom and Lentil Burger

These patties are packed with flavor, smoky and savory, then layered with vegan brie cheese and balsamic caramelized onions. Served with roasted green beans. The best part about this recipe are the mushrooms, roasting them with the selected spices really gives these burgers a rich and hearty kick. Happy cooking!

Makes 4 patties

Ingredients

1/2 can of lentils

1 tsp chia seeds

8 oz mushrooms

2 tbsp soy sauce

1/2 tsp dry thyme

1 tbsp vegan Worcestershire sauce

few drops of liquid smoke

1/4 cup of pearl barley

2 onions

2 cloves of garlic

5 tbsp panko bread crumbs

2 lbs green beans

vegan brie cheese

2 tbsp balsamic vinegar

7 tbsp olive oil

1 tsp maple syrup

4 hamburger buns

mixed sprouts

 

Instructions

Step 1

Preheat the oven to 425 F. Combine barley and 1 cup of water in a saucepan and bring to a boil, then cover and reduce to low-medium heat and cook for 20-25 minutes, until all of the water is absorbed. Rinse and chop mushrooms into 4 squares, then toss them with soy sauce, worcestershire sauce, liquid smoke, and thyme.

Step 2

Put chia seeds in a small bowl and add 3 tablespoons of water. Cover the mixture and put in the fridge. Lay out the mushrooms on a baking sheet, make sure they are not touching each other. Bake for 20-25 minutes. Ovens vary so check on them. They should look dried out. Leave the oven on after you take them out.

Step 3

Finely chop garlic and 1 onion and slice the other onion into rounds. Preheat a pan on medium heat and once hot add 2 tablespoons of oil, then add the chopped onion. Cook for 5 minutes, then add garlic to the pan. Cook for another 2 minutes and set aside in a bowl. Wipe the pan and add 1 tablespoon of oil, add the sliced onion and cook for 10-15 minutes. Then add balsamic vinegar and maple syrup. Cook for another 5 minutes. Take off heat and set aside.

Step 4

Put cooked barley, drained lentils, mushrooms, onion and garlic mixture, and chia seeds into a food processor and pulse a few times. Don’t over do it. The mixture should be chunky. Set aside.

Step 5
Toss the beans with salt, pepper, and 1 tablespoon of olive oil and lay out on a baking sheet, so they don’t touch each other. Place in the oven and cook for 15 minutes.

Step 6
Add the breadcrumbs to the burger mixture and mix well. Take 1/2 a cup of mixture at a time and form patties with your hands. Preheat a pan on medium heat and add 3 tablespoons of oil. Once hot, add the patties and cook for 4-5 minutes on each side.

 

Cut the tomato into rounds. Toast the buns lightly in the same pan the burgers were cooking. To assemble the burgers: place tomatoes on a toasted bun, then place the patty, layer with brie cheese, caramelized onions and sprouts. Enjoy!
